A famous barbecue restaurant in Gwangju has sparked controversy after it was revealed that it reuses most of its food.
On the 20th, JTBC's "Case Leader" featured a man working at a famous yakiniku restaurant that is popular with locals and tourists.
The story of former employee A was introduced. A argued that "you can think of everything as being reused except for the plates and chopsticks that people cannot eat with their mouths."
Mr. A reused most of the food served on the customers' tables, such as chives and sonji (solidified cow's blood), as side dishes.
A said, "The (reused) chives were served lightly pickled. The ones left over from that day were also served, but what was even more surprising was that the last ones left that day were also served.
"If there was any leftover, I would wash it in water and use it the next day," he said. "When I poured water into the large colander (containing the scallions), the onions would flow out. Then, the meat and scallions would remain, and I would separate them and use them again."
"The food is boiled once and then served," he said, claiming that "all the food, even the liver, omasum, and other items served as complimentary items, are reused."
A said, "At a barbecue restaurant that sells 7 million won (about 800,000 yen) a day,
"But only 15 liters came out. I reused the side dishes because that was what the restaurant owner told me to do," she said. "I felt guilty when I saw a mother feeding her child the reused meat."
This restaurant, which mainly sells beef and yukhoe, has a high rating of 4.3 out of 5 on portal sites. Reviews include "A delicious restaurant recognized by locals" and "The ingredients are fresh and delicious."
Most of the responses were positive, such as "The portions are big" and "Each side dish is delicious." In response to the allegations, the restaurant owner said, "It seems that the employees were doing it because they thought it was a waste.
However, I would like to apologize. "Song Ji-soo reused items that had been served on customers' tables, but they were untouched," he said.
The current owner took over the restaurant a year ago.
